Kay 3,709 Posted March 22, 2014 Report Share Posted March 22, 2014 Just a quick recipe for a lemon cheesecake, very quick & easy to make.. serves around 6 to 8 depends on how big the portions are 300 grms mascarpone cheese digestive biscuits jar of lemon curd butter for the biscuit base crush the biscuits & melt some butter to add to the biscuit base , once its all mixed & the biscuits soaked up the butter press into a cake tin , loose bottomed tins are better for removing the set cheesecake Allow the base to chill in the fridge mix the mascarpone & the jar of lemon curd until its creamy in texture, then spoon onto the biscuit base & chill in the fridge, best leave it a couple of hours Its lovely & fattening I didnt leave mine in the fridge long enough .. but it does harden up a bit if you can wait 3 Quote Link to post Share on other sites
