Fishslayer 10
I've never tried rabbit for fajitas. That sounds fantastic, but you should really use sour cream instead of mayo. A lot of people don't know this, but proper fajita meat is skirt steak, the diaphragm of the cattle. There is not enough diaphragm on two deer to make even a single serving of fajita. Most folks round here use beef flank steaks, chicken breasts and even shrimp. I also serve with avacado slices and fresh pico de gallo (lots of recipes on the internet). I'm lucky enough to live near several "carnicerias", Mexican meat markets where I can get the freshest ingredients. Anyone ever in the DFW area, PM me and I'll have you over for fajitas! Cheers, Mark
