Take the filles out of 4 oranges and squeeze the juice out of the left over bits.

Salt and pepper youd ducks breasts and fry them skin side down in a bit of oil mixed with butter.

turn over after about 3 minutes and do the other side for 3 minutes as well.

Now flambé them with countreu and spread the orange fillets over the ducks. pour the juice in the pan as well and pop the lot in a preheated oven for 15 minutes. Serve with wild rice and a glass of wine .

shit man my mouth is watering..getting ducks out the freezer now..dont know about wild rice will uncle bens do

 

In my opinion, a the minimum a duck deserves as far as rice goes, is a basmati.
