greenman 221
Lansky. Comes with instructions and some kits have a free knife for you to practice on. whats wong with a good old fashioned oil stone then finish ith a steel? i have a diamond sharpener thing and cant do the job i an with a stone.there is something good about earning the proper way to sharpen a knife not just kits and machines which take all the skill out of it i agree spiderpig. a few licks on the steel as you use it will keep the edge and if you let it go an oil stone is as good as anything. woz you've made a good choice in carbon steel, it's better than any modern stainless crap! if you sharpen a knife properly with a stone or steel the edge will run right up to the back of the blade if you see what i mean. sharpening tools are easy and a quick fix but theres something satisfying about doing it properly. it's not as hard as you think just takes a bit of practise.
