Fat-Ferret 857 Posted November 20, 2008 Report Share Posted November 20, 2008 A bit of time in this one, But WELL worth it....And for less than £5.00 for 2 large pies! Ingredients: 2 Rabbits, Jointed & poached in stock for 2ish hours - Leave to cool, strip off meat & place to one side 500g of self rasing flour, 250g Maragarine, stork is cheapest & what I used One packet of Tesco Chorizo, sliced One medium black pudding 2 small red onions 1 tub of tesco pancetta 1 Small tub of double cream How to: Place 500g of flour in a bowl with 250g of margarine cut in slices, rub together to make a bread crumby style mixture, add 1/4 cup of water (sparkling is good) And an egg (optional) along with 1/2 teaspoon of salt until you have the dough moist enough that it goes into a ball & looks like pastry....knead well into a large ball and place in fridge Heat a pan, chop the 2 red onions roughly & place in pan with oilve oil & pancetta on a high heat, Cook until onion is softened and pancetta crispy Add chrorizo, black pudding & more olive oil, cook for 3 minutes on high heat, add rabbit, cook for another three minutes, Add 1/2 cup of stock from rabbit pot & reduce slightly Remove pastry from fridge & roll to cover base of your greased pie dish (plate will do) Add filling from pan & drizzle double cream over filling, not too much, season Roll more pastry again to make a lid, fit lid, trim & cut an X in the middle of the pie, Place in oven at 180 until golden brown...
