A few things to admit before I put this up, I didnt cook this, my OH did, he didnt shoot the rabbit my mates next door neighbour did although OH skinned and prepared it (when it came through the door the dogs thought their Xmas had come again!!!) oh and the recipe was taken out of a book we bought when we was cruising the broads on a boat but it was really lovely and we will defo do it again, hopefully next time with our own catch, thought id share...

 

4-6 joints of rabbit

seasoned flour

2 oz of butter

2 medium chopped onions

2 medium carrots sliced

2 medium apples peeled (we left this out)

8 oz mushrooms sliced

8 oz of streaky bacon

1/2 pint of veg stock

2 teaspoons tomato purée

Sprig of fresh thyme or 1 teaspoon dried

Salt & pepper to taste

 

Heat 1/2 butter in large saucepan and cook the carrots, onions, and apples for 5 mins, stirring well

Remove from pan and set aside

coat the rabbit joints in the seasoned flour, heat remaining butter and brown the rabbit joints on both sides

Lower heat and add mushrooms and bacon, continue to cook for 5 mins.

Add the stock slowly and then add the veg and apples, the tomato purée and thyme, stirring all the time, and season.

Bring to the boil, cover, lower heat and simmer for 1 hour.

Stir occasionally and add more stock or boiling water if required

Serves 4 - 6
