charlie caller 3,654
Hi, if anyone fancies a different rabbit dish to the usual stews ect try this, boil your rabbit for around 20mins, allow to cool a bit then strip all the meat off the bones, fry the meat in olive oil and garlic until brown in a large frying pan, once browned add a good dolllop of tomato puree in with it, I use a couple of table spoons full or perhaps slightly more, and brown for a further 5mins mixing the puree well in with the rabbit, add salt and pepper, then pour over half a pint of Normandy (any dry cider will do) cider, and simmer for another 5-7mins, you can serve it on rice, or have it with veg, I like it with carrot and turnip mash, or bubble and squeak, it is a lovely rich dish and ideal for people trying rabbit for the first time, it works well with squirrel or pheasant too, enjoy Edited January 26, 2014 by charlie caller
