Attack Fell Terrier 864 Posted July 21, 2010 Report Share Posted July 21, 2010 This is a recipe that I got out of a good little Game recipe book I got for a couple of £Quid. Ingredients - 1 Hare prepared and cut into joints Seasoned flour 1 and a half oz of Butter 1 tablespoon of cooking oil 1 onion (peeled and studded with cloves) 1 carrot (sliced) 1 stick celery (sliced) 1 small orange (wiped and quartered) A bouquet Garni (which is just herbs tied up together and boiled with the other ingredients but is taken out before you eat it) Pinch of Ground mace Pinch of Nutmeg 4 peppercorns 1 pint of beef stock 2 tablespoons of redcurrant jelly 4 fl.oz of port wine Salt Pepper Butter and flour for thickening. How to cook Set Oven to 350F or Gas mark 5. Toss the hare joints into seasoned flour Melt the butter with the oil in a large frying pan and brown the joints quickly all over. Remove from the pan and put into a large casserole dish with the onion, carrot, celery, orange, bouqet garni and spices. Pour over the stock, bring to the boil, cover tightly and simmer for about 3 hours. When the meat is tender, transfer to a serving dish and keep hot. To thicken the the gravy, melt 2oz of butter in a pan and stir in 1 oz of flour. Add the strained liquid from the casserole and bring to the boil, stirring until thickened. Stir in redcurrant jelly and Port and reheat but do not boil. Pour thickened gravy over the meat in the dish. Serve with potatoes and green vegetables. I hope some of you give it a go and enjoy it. bert the fert 28 Posted July 21, 2010 Report Share Posted July 21, 2010 I tried jugged hare a few years ago. The recipe i had though used the blood with other ingredients for a stock. I think i did summat wrong at the stock stage because it just didn't work.... it was scummy and tasteless. clint 45 Posted July 28, 2010 Report Share Posted July 28, 2010 Hare mus be very clean no blood, if no quick kill has adrenlin in blood, taste like schit , smell bad you no want to eat . Put hare in bucket with pipe of water in, let water pipe put water in bucket all night , when water clear no blood, leave in clean water 24hour in cold place. I cook in tomato, with puree & herb, boil firs then slow cook all day, will fall off bone, take bone out, put 1 chilli, olive oil, 1 hour on rice to eat.
