Venison biltong

Having a great day today, watching England hammer South Africa at cricket while having a beer and chewing on homemade venison biltong.

 

I've got loads of fallow after two productive stalks in late November and early December. My son bought me a biltong maker for Christmas and I've just turned a kilo of leg meat into very good biltong - took about 12 hours marinating and then draining, then 24 hours in the biltong maker. Great machine, will take 5 kg at a time.

 

I over-did the chilli spice mix and so it's a touch salty and too spiced, so masking too much of the flavour of the meat, but still tastes good. Will do another lot with a bit less spice.

 

Would recommend to anyone who likes biltong - he said he got it from biltongmaker.com

sorry to hijack your thread but this stuff and im sure your biltong also is too good not to share or put folks onto it.!

 

quick cheats way sure but results still out standing
