Do you have a falconry centre nearby? or a vet that specialises in B.O.P if so use them. Be wary of run of the mill vets, they will just cut em off square like they would a budgie with an over grown beak. There is no real secret to it, cast the bird, nip the longest part of the mandible off from the front with a very sharp pair of cutters, file it up thats it. You can get a good casting jacket from falconry originals, plus the files etc. Watch someone experienced do it and have a go next year its the only way to do it. While they are going through the moult try and give them whole food. So they have to rip and tear through skin and bone, not just chicks, this helps keep the beak down.
