whin 463 Posted February 23, 2008 Report Share Posted February 23, 2008 hang it up keep legs a part with stick skin like a rabbit run your fillet knife from kneck to back end like a fish then take the front legs from the shoulder s then back legs from round the top of each leg then cut the neck as its good meat , i bone them out to save space in the freezer or for burgers and fresh sausages or veni mince , keep the fillets for frying in port pepper and bacon with cranberrie all the best Quote Link to post
