Yeah zander are said to be good eating ,perch also...so I'm told ?

If it's farm raised channels it almost never any kinda muddy taste. If it's wild caught it depends on the water but also how it was processed

I've had salmon from all over and I just don't get the hype honestly always comes off as dry with no flavor

I'm not the biggest fan of salmon either,  it's OK  done on the smoker as it adds some flavour but otherwise I'm just not that fussed about it.
