There are various area's in Japan where they do weird and wonderful stuff to their beef cows....but we aren't eating that in the UK. Maybe you can order imported premium stuff I don't know. In the UK we are just using one of the various wagu bulls known for the marbled fat and we then put that over a dairy cow or various beef breeds.
