I used to know a SA that made his own, don't know exactly but he used a home made box with a bulb and a computer fan to draw the air out. Silverside beef he used if I remember. Was lovely good luck let us know how you get on.

Liquid smoke

Onion powder

Garlic powder

Seasoned salt

The dehydrator I mainly use for drying the fungi I forage, but it's great for Jerky. To do in the oven at a low setting maybe with the door ajar.

This is the Recipe I use mainly you can tweak it any way you want, But a good idea to write it down so if you get a good batch. I aways seem to forget and think I will remember. Of coarse I don't so can't replicate the batch. With this recipe I do add Maple syrup to sweeten it a bit Honey would do it.

I've tried a few different cuts of Beef but up till now I find the Beef Skirt the best. If you want it chewy cut with the grain of the meat if you want it more tender cut across the grain.

I have tried Venison and don't know if it was the cut I was given but was like chewing boot leather.

i just made jerky last week out of goose breast

bbq sauce and chilli flakes.

i use the oven to make mine.

marinade the meat for a few days

feed the slices thru metal keebab skewers and drop them on the oven wire rack

making sure no two pieces of meat touch.

stick the oven on PRE HEAT @175 degrees

slide the oven rack into the top rack

place a baking sheet below to catch the drips

prop the oven door open with wooden spoon. YOU MUST DO THIS
