Slow cook in original Guinness or ale with onions, mushrooms, carrots, celery, garlic, add or remove anything else you do or don't like

Fry the meat and veg for a bit first if you like

Grate shitloads of cheese stir half into the cooked mix and sprinkle the rest on top before putting pastry lid on

I'm thinking a meal for 4. Take off the pigeon breasts from 4 birds. Slice into 1/4inch'ish pieces. Into the slow cooker with 2 medium onions, 4 cloves of garlic some sliced leek and possibly a small can of either peas or sweet corn. 5 hours. 

Parboil 8/10 medium potatoes for about 10 minutes.

Presumably  you have made the pastry by now.

Line a 9/12 inch pie dish and trim. Slice the potatoes and start layering the dish alternately with them and the pigeon. At this point boil 2 large eggs which will be cut in half longways. Now make the gravy with the juices from the slow cooker and some cornflower. 

Nestle the half eggs in the portion for each diner and pour over the gravy.

Top off with pastry and give it a good egg wash.

Preheated oven at 175 and in goes the pie for about 45mins.

 Best served with a nice selection of fresh vegetables.

My take on pigeon pie. Jok.
