Cheers Arry Food of the gods Arry, the fillet is coated in salt, sugar and whisky (and some dill) wrapped in cling film and left for a couple of days in the fridge with a weight on it. Wash the salt/cure mixture of it and it’s ready to eat. Did a side last year and it was bloody good Quote Link to post

It was a cast of sorts, not sure what you would call it but am going to practice it again in an hour when the tide is just right.
