If you don.t have a slow cooker get one ,

3 CARROTS SLICED

4 TATTIES LARGE AND CUBED

SADDLE AND LEG MEAT OF 1 OR 2 HARES

1LB OF BEEF SKIRT CUBED

1 LARGE ONION SLICED

1 LEEK SLICED

SWEDE TO TASTE

IF YOU WANT YOU CAN ADD SOME PHEASANT PARTRIDGE AND RABBIT

2 KNORR BEEF STOCK CUBES

1 PINT OF WATER

PUT IN THE OVEN FOR THE DAY ON A VERY LOW HEAT

ADD DUMPLINGS FOR LAST 20 MINS

 

 

PICKLED ONIONS ARE NICE IN THERE AS WELL

joint a hare dust in seasoned flour . brown meat of in pan with some oil . place joints in casserole dish.

soften a onion add 3 cloves garlic fry for a further minute add to the dish with the meat . pour over 2 tins

Baxter's game soup put the lot in the oven 120 for 8hrs. serve with buttered mash potato.

Southern fried Hare..

 

In food-storage bag, mix flour, salt, black pepper, and cayenne pepper. Add hare and shake to coat. Either place in frying pan with a 1/4 inch of oil or drop into deep fat fryer. Cook until browned; or put knife into the meat and if it comes out clean, it's cooked. Serve with chips and beans, KFC style :thumbs:

One of the easiest, cheat's way of doing hare is to joint it, put it in a big saucepan with a tight fitting lid: put enough water in to half cover the joints: add chopped onion, or leeks, celery, garlic etc. Salt and pepper. Bring to boil and simmer until meat is tender. Take meat out, take meat off bones as soon as cool enough to handle. Put meat back in juice, add a good lump of bacon fat, butter, lamb fat, and a Cook In Sauce. Add potatoes or dumplings. Simmer for 20 minutes and you have an almost instant hare stew. The meat is tender because it has been pre-cooked. You can add whatever you want and make your own sauce/gravy with real ingredients but the above is quite a fool proof way for non-chefs.

Cook the hare (Beddy cross owners can use a rabbit, saluki owners try and get a hare that dosnt come from the fens, hares from other places are usually fitter and the meat therefore better, bull x lads can use fox meat if they can stomach it) take all the meat off and cut it up into decent sized pieces. Boild a pan of potatoes and a pan of partly cooked onions,,mix meat, pots and onions all together, take a good handful and form it into round round pattys, cover them with breadcrumbs. There you have them, Ashington Hare Pattys..Heat them later in a shallow frying pan till their hot right through..a good sized hare you should get 8 pattys with loads of meat in, Jocks will probably get 10-12 Yorkshore tight arses will get about 20..We used to feed hares to the dogs or take them to the game dealers at the right time of the year when the price is right up..but after youve tasted hare pattys you will be keeping them all for this..and it will make you all hard as owt like us lads up here :thumbs::thumbs:

like the sound of some of those , chesters looks very easy with the soup.... and i like the ashington patties they sond good to.

 

i just cassarole them,,, onion, leak,cellary, carrot, and a couple of packets of cassarole mix like 3 turns said, you can yous sausage , chicken , beef, or a combination of them. and the joints of hare , simer gently on the hob for 4 hours stiring regular so it dont stick.

 

after 4 hours or so lift out the joints let them cool for half hour or till you can handle them , and pull the meat of the bone, and put back in the pan, at this point i add potatoes and cook for another hour , i have also just started having a mix of sweet potatoes as well as the normal ones.

 

like all stews/cassaroles its better the next day :thumbs:
