Yes pine is soft but......for a couple of carcasses a year they would probably do fine as a a handy chopping block. You could laminate them in oak flooring boards if you wanted a harder wearing surface although you may have issues with the hard and soft wood expanding and contracting at different rates. My lad makes wooden boards and he was caught out with one where he combined end grain and side grain looked the part but... was prone to splitting along the joints.
