I'm mid thirties. Mortgage will be paid off by mid forties. 10 years to do courses, research and learn. I guess the big question would be would I remortgage and try to buy somewhere or rent. 

10 years sounds a long time off but it's not......times going quicker each year

No I haven't at all. Like I say it's just pie in the sky at the minute......but it's a life long dream that increasingly seems possible I suppose.

I think a lot of people would like to know what breed it is and where it came from, instead of all the cross up tasteless stuff you get in the supper markets. But you could start slowly with a stall and not give up your other job in one hit. Atb.

One near here does well. Family business with their own on site abattoir, so people from the villages prefer to use them because they know the lamb, beef and most of the pork is locally grown. They are also close enough to the motorway that the people from the nearby culturally enriched urban centres come to buy from the continental department of the butchers. They also run some fridge vans doing home deliveries and catering supplies. Their staff are excellent and must be well looked after to do the long hours and good customer service.

There was also a one man butchers 3 villages away until he retired a few years back. He worked crazy hours, buying at London meat market before opening the shop, but did well in a village with a cr@p post office and pub that you would have to make a special trip to visit. When he packed up, someone else took on the little shop to run as a deli type shop, but not sure that they are doing that well. I think you need an area with affluent people that have time on their hands.

Rare breed meat delivered to your door sounds like a money maker to me, after all the best way to save a rare breed is to eat it.

Cheap set up costs I would guess.

Specialising in game another good one , sure you got the contacts for that.

Mate sells shot pigeon for 50p each to local game butcher restaurants would pay a lot more than that for sure.

You do not have a chance mate, butchers shops are closing down everywhere they cannot compete with the super markets on price , there are some good  butchers  shops around but they have Niche Markets and you will not take their custom. Stick to what you know .

That's where I disagree. I don't think butchers are shutting anymore.  The local villages are seeing butchers thrive. The ones that shut have new ones opened. In the 90's supermarkets had an effect but I think it's come full circle. The local town has a number of new butchers and they are packed. Our village is the only place locally with no butcher......as I have said it's a small town in its own right now. Just can't see any possibility of a suitable site ever coming up. People want traceability in meat these days since all the scandals.....

Buying an established business is obviously easier as you have qualified staff already practically running the shop which allows you time to train at your own pace there's a lot to learn to become a butcher ......
