An Evening Rabbit Shooting

Lads, I just cooked the legs up Peri peri style and they were lovely, so tender. All you have to do is marinade in peri Peri sauce, salt, pepper, cayenne and paprika over night (or for a few hours). Sear in a pan with some garlic, a little olive oil and some lemon juice. Then cover with chicken stock and simmer for an hour, or until the meat starts coming away from the bone. Remove and then mix up with more peri Peri and then whack them on the gridal pan or bbq (prob better on bbq) to char them. Bloody lovely.
