I pluck them while they are still warm, as soon after you've killed them as possible. Then you can hang them after if you like.

 

Be interested to hear what the op does.

exactly the same mate. If they have been dead for some time start at the crop and work slowly down the breast and don'tpull to many feathers off at a time then then the rest is easy

I've never hung plucked birds but do know that plunging them in hot water does work. But I rarely do it.

Rough shot Pheasant rarely are corn fed so skinning is the handiest option and that's what I do. If they need some fat I drape some rashers across them.

Those birds look tasty.
