I've just done my second one - had a store lamb first time and just finished making faggots from the trim of a Ryeland hogget today. I was planning on getting a post up on it over the weekend. Best flavour I have ever tasted, and super tender when roasted long and slow. She actually ate more like beef, With some lovely marbling running through the meat.
