Cooked this up tonight. I won't be offended if it isn't everyone's cup of tea. The carcass is meat and bone only. No fur, bits and bobs etc.

Method:

About 4 tablespoons of olive oil (it's the modern way, maybe lard will come back when we leave the EEC)

8 fist sized diced spuds

3 onions

2 large garlic cloves - squashed with the side of a knife

Added chunks of the rabbit then the rest of the carcass and hob top fried for about 20 mins.

Added about two and a half pints of veg stock.

Half a pound of frozen green beans

A good fist of frozen brocolli

A large pinch of salt

1 tablespoon of dried sage

1 tin of toms

 

Boil on the hob for 10 mins then

move to main fan oven at 180c for 3 hours while I arse about outside fitting a roof rack to my Mini which goes for MOT tomorrow. And any other jobs I digress on to.

 

Then viola, as above.

When I am done, I will use the carcass to make stock.

Mini didn't pass the MOT but just failed on headlight aim and a track rod end. So easy stuff really. Wish I'd spent a bit of time in prepping my bike for the journey from the garage to work, so rusty chain meant stuck in one gear for 4 miles.

But at least I had another serving of rabbit stew for lunch.

Probably have the same tomorrow too.
