Butchered 3 sheep the other day so have been living on mutton / lamb all week.

 

One of things i did was to boil a neck for stock, then strip it to make a mutton broth, bloody hell, it was beautiful. Had to chill the stock to lift the fat from the top, then made soup with it.

 

 

Get down to the butchers and get the neck off a lamb,, absolutely beautiful.

 

 

Another thing I`ve been using is those Maggi roasting bags, the are superb, did lamb ribs in the barbeque on, and did a load of partridge legs a garlic and herb one tonight, easy and lovely,,
