Stuffed rolled rabbit.

Had a hankering for rabbit today, but wanted something different. So I had a deboned rabbit and stuffed it with smoked bacon and a garlic and herb stuffing.

 

The deboned rabbit.

A layer of smoked bacon placed over the top of the rabbit meat.

Then a layer of the garlic stuffing layed over the bacon.

Rolled and skewered ready for the oven.

Two hours in the JML @ 175c.

It really tastes great, the bacon fat has kept it moist. Best of all though is not a bone in sight.

Top recipe there :thumbs: Making my mouth water just looking at it. I like to douse them liberally in lamb fat as well: grate hard lamb fat and sprinkle the layers with it.

They are brilliant would not be without one now. We have a duel fuel range cooker and the oven is the size of the cooker Great for xmas can get a 20lb turkey and a goose in at the same time.But fecking useless for cooking a chicken it takes half an hour to reach tempreture.

 

The JML is brilliant anything an oven or grill can do you can do it in the JML, it saves a fortune in electricity as it is almost instantly up to tempreture and cooks quicker than a normal oven. The only down side is you are limited to the size of the meat you can use it for.

great idea ... ive never tried to debone a rabbit i will give it ago next time.... it can always become stew if it goes wrong :laugh:

Or ferret food like the first attempt I made a boning. :laugh: :laugh:
