Rabbit Burgers

With minced pork bellies to put in some much needed fat or they tend to be very dry when you cook them. I tried rabbit meat only burgers and they weren't that nice.

The fat in the pork bellies goes crispy too mmmmm! :) Good when you add some fresh herbs in and perhaps a few dried chilli flakes too, inevitably some finely sliced onion, or shallot if they're available.

A favourite of mine Ian (you can ask Dixy and Mrs Dixy for their opinion)

 

Rabbit 60%

Pork Belly 40%

Red onion

Dijon Mustard

Worcestershire sauce

Salt

Pepper

Bread crumbs...

 

If its not binding, add a egg or two

I dont measure, just kind of Judge in the mix...

rabbit minced with pork belly

garlic

fresh red or green chili

bread crumbs

salt &pepper & herbs

surprised know ones mentioned adding black pudding to the burgers , a use it also with me sausages ! atb ryhope toma

 

Yes Toma local butcher also recommends adding black pudding to them... What else do you add in your burger...

just about the same , but throw an egg in for binding the burger togeather , when ya done mate gis a bell and when am passing to go to stanhope all meet you for one ha as your location is Durham , atb toma

i always do different burgers some 50% rabbit 50% sausage meat and leave them like that just plain old burgers. i do some 75% 25% etc etc. i add onions mixed herbs and a little black peppercorns. i only weigh the meat each time just add whatever i think with the herbs onions and black pepper. i always put the onions through the mincer.

 

i make hare burgers and venison burgers at times aswell. imo there good quality healthy burgers.

1lb minced rabbit

1/2lb of minced belly pork

teaspoon of colman's english mustard

tablespoon and a splash of tomato ketchup (only the best)

medium finely chopped onion

2 medium eggs (to bind)

beef oxo cube (more to colour than to taste)

optional .... 2 cloves of garlic ..tabasco ..finely chopped hot green chilli
