craigyboy 1,274 Posted December 13, 2011 Report Share Posted December 13, 2011 brown the portions of squirrel quickly in a little hot oil,then put em in a casserole dish,add a couple o chopped carrots an onion and some mushrooms,then add a sachet of colmans chicken chasseur mix and bung in the oven for a couple of hrs and enjoy Quote Link to post Share on other sites
The Duncan 802 Posted December 14, 2011 Report Share Posted December 14, 2011 Cajun Squirrel Hinds: score the hinds, coat in beaten egg and then flour with cajun spice mixed in. Fry in very hot oil for a couple of mins to get the coating crispy then 15-20 mins in medium oven to finish cooking. Tastes like KFC, only a thousand times better! V Good dipped in garlic mayonnaise. Or more simply: season with salt n pepper and a bit of finely chopped garlic and fry until just cooked and tender in butter/sunflower oil Duncan Quote Link to post Share on other sites
