The money's in the preparation. A complete carcass takes a fair amount of work to turn it into saleable product. The price/kg is shockingly low still, but the dealer has to absorb a fair amount of waste in terms of bone weight that can't be sold on, and also the 2 hours or so of skilled butchery to turn a whole carcass into joints and cuts.

 

It does rather annoy me when I see venison for sale at £20 plus per kilo, knowing the amount that the dealer will have given the hunter for it.

With electric saw & shrink wrap machine, you do it. Sell to butcher packed & to friends , of friend of friend. bugger dealer ! Working man club you sell all rabbit, venison,duck ,goose at price better than butcher. sell all ! get off you lazy azz :laugh:
