i read somewhere that tripe is only about 8% protein so i can't understand why its so popular. lamb is good meat for putting weight on a dog, plenty of fat in it(plus decent protein!)

As-is, maybe. All fresh food is around 75% water, just like you and I are. On a dry matter basis (which is what counts for an objective analysis) 8% works out quite well indeed. But for banging weight on you can't really beat fresh raw breast of lamb, and (obviously enough?) any fatty foods. Whole eggs and a spoon of fish oil won't hurt either, and are excellent for building a dog up.

Feed more calories than it burns and the extra calories will be stored as fat but why would you want a fat dog?
Fat has more calories pound for pound than carbs or protein so feeding fatty/oily foods will increase the calories without adding bulk to the diet.
