Beef sausage recipes?

Well, we finally got organised and bought a mincer and a sausage maker - now we just need some recipes for beef sausages (from our Dexters).

All suggestions welcome :)

On the pigeon watch site receipes theres a guy whos researched it and explains the process in detail inc links (no pun) percentages of fat rusk water etc.YIS

Yes totally agree, get digging that horseradish root.

PM me and tell me your likes and dislikes, email address and Ill send you some Ive got loads. Google "Scoby Junor" they do all sorts of butchers sundries and you can download recipes on line, they do a fantastic mail order service.
I only ever use natural casings, but make sure you soak them overnight in the fridge then wash them thoroughly - they are preserved in salt!!

Once again I agree. A sauasge isn't a sausage without a natural "skin"
